So I’m Back – New year , new apprentice, new riders – All is good :)
As allways the first job of the year for the chef is the january training camp, where 21 hungry guys have three meals a day, and so My new apprentice and I are busy all day long – but i have managed to squeeze some time out from the kitchen to kick of the new season with a small blog entry.

#vueltachefbattle stage 4 – VOTING TIME !!

Vuelta España is leaning towards the end… What an amazing stage yesterday – They all did so well and I’m so proud to be a part of the team.
We had the 4th Vuelta Chef Battle some days ago, here’s the new dishes and the results from stage 3 :

Results Vuelta chef battle #3 – Team sky and Team Saxo Bank Tinkoff Bank takes no. 1 together.

So better late than never – here are the dishes of the last and 4th vuelta chef battle:

Team BMC – chef Peter – Chicken skewer.sweet and sauer cramberrysaus and gingerchips.

Team Omega Pharma Quickstep – chef Mitch: chicken,blueberry,ginger,carot,greenbeans

Team SKY – chef Søren. “ballotine” of chicken breast stuffed with ginger and parsley compote of mixed berries baked and dried raspberries

Team Garmin Sharp – chef Sean. Turkey and pumpkin stew with dried cranberry polenta and julienne caramelized ginger

Team Saxo Bank Tinkoff Bank – Chef Hannah – Chicken , ginger glace, caramelized onion and blackberries

Stage 14.

What an exciting day -after driving just over 300km, we arrived to Léon – a city with very old buildings surrounded by buildings from the 60’ies to the 80’ies… weird mix!

After a small walk round town I had to watch the last part of the stage – HOW CRAZY WAS THAT… I was standing in the front of the TV cheering for Alberto very loudly, for a fact: everyone outside could hear me… but it was really really exciting! He did an awesome job i think :)

As a usual part of the day I get greeted by the sports directors with a plan for the evening and the day after – today it looked like this:

Menu of the day:

  • Apple, caramelized cauliflower, tarragon and heart salad
  • black beans, pork tenderloin, pickled butternut squash and red onion
  • lasagna with semi-dried tomato
  • chicken puttanesca
  • rice and pasta
  • rosemary sourdough bread
  • carrot cake and cream cheese “frosting” with fresh blueberries
  • fruit

Early start for me and Troels tomorrow, so I’ll “hit the sack” as one would say

Sleep tight – don’t eat crap food – stay tuned for more !

The Vuelta Chef battle stage 3 took place this night – Peter from BMC had the task of choosing the ingredients and he chose:

  1. potato
  2. apple
  3. chives

Here are the dishes:

Team sky, Chef Søren : Potato and apple in a crust pastry with chive oil. Apple and potato gazpacho with chive and a chive foam

Team BMC, Chef Peter : chive/potato rösti whit apple on top

Team Garmin Sharp, Chef Sean: Dauphine potatoes with carrot and zucchini topped with maple caramelized apples wrapped with smoked salmon and (replacement for chives) julienne leeks

Team Saxo bank Tinkoff bank, Chef Hannah: potato blinis, salmon tartar with chives, olive oil confit potato pearl, raw apple pearl, tangy apple pure
